I see no reason to do anything but inject and fry ever again.
Faster, tastes better, juicier and if I really want stuffing, that's what they make Stovetop for (and besides, a proper grandma can make scratch stuffing with just the neck and gizzard bag you pull out of the center anyway...) Roasting means dried out breasts, undercooked dark meat or salmonella stuffing. If you tent the breast you can help things a little but it's still just not as good.

Just keep a temp probe in it and you should be ok, I keep the lid off for most of the cook unless it's really cold.

We bought one of these five years ago. I had low expectations, considering how inexpensive it seemed, compared to other options.
It's truly amazing. I really have no idea how it works as well as it does. But the turkey comes out crisp on the outside, and totally juicy on the inside. And it doesn't take all that much time to prepare it, or to actually do the cooking. When we've had family over for Thanksgiving, I almost feel like I'm cheating. People go on and on about how it's the best turkey they ever had. And I've sort of gotten the reputation in our big, Mormon family as being something of a turkey whisperer. Just get one. You won't be sorry.
