Must start 3 or I can replace one of the RBs I have as the Flex (But doubt it's worth it).

Wes Welker @ MIA
Percy Harvin @ GB (Q/ ankle)
Brandon LaFell @ KC
Antonio Brown @BAL

I am leaning towards benching Brown, honestly. LaFell has been getting a ton of targets the past two weeks with a tempting match-up against KC.

Here's the really tough one:

Jason Witten vs PHI
Greg Olsen @ KC

We get torched by TEs and Olsen is quite the security blanket for Newton, but Witten is Witten and he's going against that awful PHI defense. I'm leaning towards Witten, but I fear I will see Olsen rip us apart and regret it.
The Cowboys as usual are always overrated every year and par for the course they are struggling. The more they struggle the more Witten is Romo's binky as you say. Never sit Witten, hell if you have a flex spot that you can start a W/TE start Olsen in that context if you can. I would have no problem starting 2 TEs.
