But, I'm not sure the argument here is necessarily about jaw strength, but more about the persistence of the bite. It just seems that Pitbulls are easily agitated and when they get those jaws on you they damn near die before letting go.

Size of the breed doesn't matter. Supposed friendliness of the breed doesn't matter. Except at the edges, age of the animal doesn't matter. If you (or yours) piss off a dog enough, or trigger a response in other ways (running, rough play, etc..), it's on like Donkey Kong.
