That's what bothers me about pecan pie. Only time it worked was making minis in a shallow tartlet-style pan. Actually it was a muffin top pan, which I used like a tartlet pan. Those were mostly nuts surrounded by goo.

The photo was illustrative of the layering I mentioned. You don’t seem to understand that what it’s doing, IT’S SUPPOSED TO DO.
The reason the tartlets worked for you was because the pecan to filling ratio was different, like I suggested as a way to fix your issue with pecan pie.
But the pecans floating to the top is how pecan pie is supposed to be.
