Kimchee is an acquired taste and it's the national side dish of Koreans. It is made with napa cabbage, radish, and scallions and a seasoned paste of red pepper, garlic, ginger, sugar, and fish sauce, salted shrimp, or kelp powder.
It is soft yet crunchy and has a unique tang and heat to it. I have a broad pallet.
