I have both of those now. You got me to try ghee but I bought it at the health food store as it was on sale. I'm lazy about making everything from scratch. I do enough as it is.

I have coconut oil, Earth Balance, Spectrum shortening, butter, olive oil, grape seed oil, sesame oil, peanut oil, canola oil a few more in small quantities as it goes bad. And I use the "Can't Believe" for a few dishes ( but not always - like if a holiday meal). I use a variety—not just one. I have cut down on the canola when it came under attack but I do use it for certain things where a large amount is needed as it's cheaper.

In fact I tried finding one of the worst oils for you which was cottonseed oil cause Cafe du Monde and other bakers claim it's the best for beignets. Never found it anywhere. I'd use it for the rare occasions I'd make a beignet which is probably a few times in a lifetime though.
