They talked on Talking Dead with the creator, that they do not poop. We know their stomach fills, b/c of the Woodchuck they found in one, and of course, where else would it go?
Something has to happen with it though, or they'd explode. Maybe their meals are broken down in the stomach and everything is absorbed to the body.
