I would also consider the fact that Kansas State ran a 3-3-5 defense (or a 3-man front).
To put up those type of numbers while on that 3-man front (which invites more double teams, mainly the T & G), and winning the Big XII DPOY, kind of explains it.
To put it in another way, when he gets into the 4-man front in Spags scheme, he won't have that double team issue because they also have to account for Chris Jones in the interior.
