Checkoff is industry wide. Trade groups are limited. I don't know the mechanics of it on the critter side of things but on the grain checkoffs, it is involuntarily withheld from each bushel sold. Checkoff dollars then flow to the associations that "represent the best interest of the industry" and spend it on market development, education, etc.
Trade groups like the ones you listed are limited as to differentiate themselves. I'd presume there is a dues structure in place.
