The only reason to purchase Pro is if you'll need 512 gigabytes of RAM. 8.1 OEM supports up to 128 gigs, if that's enough, go with 8.1 OEM.
It wasn't listed but are you planning to purchase the Gigabyte Z97 UHD3 Black? I'd recommend it because the components have a higher level of tolerance. The workstation boards are of the highest grade but they're at least $300 dollar more and probably isn't necessary for your work.
