Just like a muffler. Only located up close to the engine whereas the muffler is located further back. Either bolted on or welded. With rusted or hard to loosen bolts a hack saw or saws all is most likely used.
I'm surprised when you hear of a car instead of an SUV or truck with bigger tires and more clearance to crawl underneath. Always can use a jack too. In that case at least there's a chance the jack slips and the thief gets their head caved in
