I've never been gone that long, but after a couple of days gone, one rubs up all over me for a while, and the other two plaster themselves next to my side for a couple days.

My cat doesn't jump up and down run around like a crazied lunatic throwing slobber everywhere when I get home. But he does follow me for a couple minutes to get his head and ears scratched. Meows a bit, then goes and suns himself or murders a rat or two.
Agreed. I actually prefer that I have to earn the affection of my cats. Mine rub all over me and want love and attention when I get home from work or even wake up in the morning. People that say cats don't care have clearly never been around cats much.
