If the Mother isn't dying and Ted is telling the kids the story for a reason, and this reason has been at least been kept in mind since Season 2 when they filmed Penny and Luke's reaction for the final scene then there has to be a pressing reason for him to tell the story.
Episode 200 reveals the Mother wants to end poverty, and the episode before this week's showed that the Mother has received acclaim for her book as we see her and Ted on their way to celebrate this occasion. Last night, Ted gets choked up with the whole Mother not being there for her daughter's wedding which is anywhere from seven to 15 years away from the "present" day in 2030 when the kids are told the story of how their parents met.
The Mother won't be around after 2030 because she's involved in something important dedicated to ending poverty and that this effort will take her away from Ted and the kids for an extended period of time and could be very dangerous. This is why Ted is telling the kids the "greatest love story ever" in that he details how much time passed and what he learned before finding the perfect woman and how he's at peace with her leaving to follow her passion of ending poverty because that's what love is.
Here's an interesting point to ponder.
What's the meaning of the episode name: "Vesuvius"? Does this mean a twist is coming?
