Smoked Vegetable Recipes
 
Hey fellow BBQ smokers I'm looking for some good vegetable recipes to smoke on my Weber Kettle 22 1/2 in.

Smoking some chicken right now as we speak and doing a brisket this weekend.

Believe it or not Kroger over here had briskets for .99 cents per pound for the last week and more cows were killed than ever.

I specifically want to smoke onions but haven't had success without it them falling apart.

Would like to hear what you guys did.

I tried to smoke a carrot once but I could not get it to light.

yuck ... never seen the point of smoking veggies.

Baked beans, of course (let the fat from a pork butt drip into them during the smoke, but don't over do it).

Poppers (jalapenos stuffed with slivers of rubbed chicken and wrapped in bacon) are good.

I would think sweet potatoes, acorn squash, and artichokes would all be good candidates, but have never done them. The book Smoke and Spice by Cheryl and Bill Jamison has recipes for all three.

I also drop a sliver of onion in with the rubbed chicken.
