Hillbilly Ham Salad
 

I'd never heard of it and thought it was a joke. A friend told me about it. Apparently it's not uncommon. Kroger even sells a version of it. They call it Kroger Sandwich Spread.

The simple version is:

2 lb. cheap bologna chopped finely
8 oz. sweet pickle relish
2 cups mayo or Miracle Whip
1 hard boiled egg chopped finely

Mix ingredients and enjoy!

Isn't all bologna cheap? It's all nasty, that is for sure.

It's not. Some bologna goes for nearly $5/lb.

This recipe came from a friend that grew up dirt poor with 4 brothers and sisters. I've seen bologna for less than $1/lb.... that's what this calls for.

Ugh. Not a fan of bologna. I'd rather pay extra for some ham.

Mom used to make this. Sometimes I get a craving for it in the summer oddly enough.

They key is using thick cut bologna.

bologna is made from the last part that jumped over the fence.

Let me guess, you spread that on Wonderbread, maybe adding a little spritz of Cheezwhiz. Wash it down with an RC Cola. Maybe have a Moonpie for dessert?
