Jerky recipes
I make deer jerky a few times a year and I always use the same recipe. I'm wanting to mix it up and try somethin a little different. I use soy sauce as my main ingredient in the marinade. I would love something with a citrus undertone, or just something different than the soy-ish flavor I've used for years. What you got? Thanks

I'd try some sriracha in your marinade if you already haven't.
As far a citrus, I was in Mexico last week sitting at a beach bar and watched this bartender peel a lemon and heavily dust it with chili lime seasoning and ate it whole. I noted that as a flavor profile to try back at home. There's also a Pakistani place in my neighborhood that serves up sliced mangos with red pepper flake sprinkled on them, which is a nice play on sweet heat. |
I use the siracha already for spice.

Try lemon pepper/lemon zest/lemon juice with honey for the sweet and redwine vinegar as your marinade instead of any soy or worchstershire.. Red pepper flakes for heat.

You could do a take on cochinita pibil which is traditionally orange juice and vinegar based with annato, cumin, black pepper, salt, allspice, cloves, garlic, minced habanero and lemons.

I combine $5, my car, myself, and the nearby convenience store. The result is a delicious bag of Oh Boy Oberto.
