I see no reason to do anything but inject and fry ever again.

Faster, tastes better, juicier and if I really want stuffing, that's what they make Stovetop for (and besides, a proper grandma can make scratch stuffing with just the neck and gizzard bag you pull out of the center anyway...)

Roasting means dried out breasts, undercooked dark meat or salmonella stuffing. If you tent the breast you can help things a little but it's still just not as good.

My Dad smokes a couple of turkey breasts every year and they are fantastic.

Don't care about Turkey. However, when i DO do Turkey, i prepare a dry rub for it and bake it covered with strips of Bacon.

It's the Ham that steals the show any way. And I use a Citrus Rum Glaze for my Ham.
