Best cold dip ideas?
 
Ok for some odd reason I have an itch to make a cold dip of some kind but am at a loss for what to make...

Thinking of a cold pizza dip or going the other direction and maybe something very light like a diced cucumber/feta with a vinaigrette base.

Just tossing ideas around now, if anyone has something really unique or ideas for how I should make either of these... let me know... otherwise I'll try to come up with a recipe of my own and you guys can tell me where I am going wrong...

ok, here is what i am thinking so far...


1 part diced cucumbers
4 parts crumbled feta
1 part diced green onion
1 part diced yellow(or red) bell pepper
1 part diced Hatch green chiles (hot or medium)
1 part diced tomatoes

Tossed in a lime vinaigrette then chilled. Served with pita wedges.

Other than salt and pepper, any suggestion for spices to use?

Does this sound like it would suck?

I don't care for cucumbers much either but with feta they work for me. yeah, this is very salad-like but the point is to be a very CRISP cold dip.

Garlic or garlic salt. You could add in some black beans as well.

I briefly considered black eyed peas but then it is basically my texas caviar recipe with cucumber instead of jalapeno. So I'll prolly skip the beans entirely.

I think you are right, I'll skip the salt and use garlic salt.

Thinking of cheating and just using Greek seasoning.

Added a bit of yogurt so I'm told it was yummier after I left and it set.

Nice. I think I'll do a test run and have one without sauce (just tossed in lime vinaigrette) and the other with a yogurt based sauce(Tzatziki)

Awesome! I think that is the plan. I'll let you guys know if it sucks or not.

I had my doubts, but like this a lot; sounds similar to what you were going for...

Greek Goddess Dip
Ingredients:
1 cup hummus, (I used garlic flavor from Trader Joe’s)
1 cup English cucumber , diced
1 tomato, diced
Red onion, diced. ( I used about 1/8 cup. You can use as much or as little to your taste)
½ cup crumbled feta cheese
Salt & pepper, to taste sprinkled on tomatoes, before you place in dish
Tzatiki, (this is a cucumber yogurt dip, I found it pre made at my local Wegmans grocer, you can also find many recipes on-line)
Black olives, ½ cup (optional)
Directions:
Prepare all your ingredients per list, dicing veggies.
In a shallow bowl, Layer hummus, tzatziki sauce, cucumbers, onion, tomatoes (season them first). If you choose to use olives, add now, finally add feta.
Keep in fridge until ready to serve. Serve with pita chips.

I like Philadelphia roasted pecans & sweet honey cream cheese. I suppose it would be easy enough to make mix roasted pecans and sweet honey into cream cheese melt it down and cool it off in the fridge.

Ha, no it's a dip that tastes like pizza.. or so that is the idea. Lot's of hot versions but I found a warm/room temp version I may try.

Basically it's cream cheese, tomato paste, diced pepperoni, oregano, and basil all blended up then topped with shredded cheese and pepperoni and baked till shredded cheese melts.

No clue if that will be decent but sounds worth a shot, I was just wondering if anyone knew of a "cold" version.

To make it cold I would go with cream cheese, loose sausage, tomato paste, nacho cheese and the spices all blended together. Then mince the pepperoni and add it in while the mix is still warm. I would think about adding parmesan flavored bread crumbs as well but you may have to be careful to keep it thin enough to be dip-able when served cold or at room temp. Good old fat free Greek yogurt or sour cream works well for that. Should taste like pizza.

OK, I'm going to make the cold pizza dip. I just got back from the grocery store. I forgot it was Sunday. Holy shit, I was wading through a **** ton of Catholics and the aisles were packed. I grabbed most of what I needed with mounting frustration then finally announced in a loud voice that I thought I saw the Virgin Mary in the bread section. Taking advantage of the confusion I quickly grabbed some canned pizza sauce and headed to check out. So I won't be seasoning it myself but otherwise it will be just as I said. As soon as the boy is done washing his dishes and out of the kitchen I'll start making it.

Cool. Here's a half assed recipe to do it in one pan:

Cook 1 pound of loose sausage. Lightly brown it in a nonstick pan. Drain completely and continue to cook it until it is seared evenly throughout.

I haven't made this in quite a while, but it is always a big hit. You can add some chopped jalapenos to spice it up if you like.

Monterey Jack Salsa


Ingredients
2 cups shredded Monterey Jack cheese
5 green onions, chopped
1 avocado - peeled, pitted and diced
1 tomato, chopped
1/4 cup chopped fresh cilantro
1 (4 ounce) can diced green chiles
1 (6 ounce) can chopped black olives
1 cup zesty Italian dressing

Directions
In a medium bowl, mix together cheese, onions, avocado, tomato, cilantro, chile peppers, olives and dressing. Serve.

Decide how much you want to make and buy your cream cheese accordingly. Horseradish to taste (I like a very healthy amount myself). Olives also to personal preference.

My mom has made it for years and she has never had actual proportions. So this is the only way I know to do it

The cold pizza dip has cooled in the fridge. It tastes like those microwave pizza rolls but fresher. Not bad at all. I'm going to let it sit in the fridge overnight before we give it the final taste test.

I grabbed some light corn chips but I am thinking pita chips will be great. I'll be trying those and pretzels after it sits in the fridge overnight.

I make this stuff for parties sometimes... It's a bit of effort to put together but it crushes it every time. Grilled corn, creme fraiche, green onions, and a bunch of other yummy stuff. Sour cream will work in place of the creme fresca, but get the real shit if you can find it. Best place to get it in salt lake is whole foods.

It's the next day and the dip is completely done. I should say was completely done. We wolfed that shit down like it was manna from Heaven. I am going to say go ahead and double the amount of pizza sauce and omit the Greek yogurt or use a sturdy object to dip with. It was quite thick at fridge temp.

It's been said in this thread, but I make a corn dip for tailgating that is a hit. Mayo, sour cream, canned mexi-corn, chopped olives, green onion, shredded cheddar cheese, spices to your liking. I add a little cayenne, salt and pepper.

Fritos large scoop chips to eat it with. It's a fatty food and you feel like a glutton shoving this mayo/corn abortion into your face, but it's still delicious.

Buy the pita chips (or whatever you plan to use) ahead of time because you are going to wolf this shit down. I am trying to remember the name of these chips I had gotten that looked like little pieces of rye bread. Very crispy and sturdy with a lot of crunch. I think those would be perfect.
