I would assume the engine races up to the rev limiter.

Exactly. Your motor will overpower your breaks every single time. If the motor was truly maxed, she'd have never brought the thing to a stop at all.

Correct, up until the point where the brakes get so hot they boil the brake fluid in the calipers/brake lines. That’s where “brake fade” comes from.
