Foreign phones do not use satellites for texts or calls. They still need cell towers.

...and US phones aren't stuck on one system. T-Mobile and AT&T use the same system (GSM) that most of the world uses. You might be thinking of Verizon and Sprint which uses CDMA, which is mostly found only in the USA.

But yeah everyone has cell phones. Even in the middle of the desert. That's why I'm surprised there hasn't been any footage of even boarding or taking off, or last texts sent, which could provide clues.
