Winner, winner Massaman chicken dinner!

Made some Jasmine rice with a Kaffir lime leaf in it, the Massaman turned out good, but not as I'd hoped. The sous vide chicken was perfect!

Sous Vide Supreme. And I really do like it. I do almost exclusively protein in it, but I've made some pretty good veggies in it too.

Which curry paste is more spicy? Red or Green?

Both are spicy, but green tends to be spicier. They also tend to be a little sweeter.

if youre looking for heat (like you like the flavor but just want more heat) you can just add peppers...or you can try increasing the amount of paste (if you want more flavor as well) you use...

or both

i would wait to confirm with fire me boy tho, he sounds like he knows his shit....

I would use whatever green hot chili was freshest like thai or jalapeno if you have those in your garden

edit: if you have a mexican market , serano (sp?) chilis are very very good...I have used them alot in different recipes.....and theyre tasty and can be hot if you use a few

FWIW i almost always double or even quadruple the paste called for on container....

and THEN add some chilis if needed....


of course by doing this, it unbalances things a little, so u need more fish or oyster sauce, and a little more brown sugar or honey too, and maybe a bit more cocnut milk...... just add more paste and get it back to balanced and then add your hot chilis if it isnt hot enough and let it blend...

thats how i do it anyway

My favorite thing to do with Thai food is let the carrots soak overnight in the curry sauce.

They get all soft and delicious and INFUSED.
